Colonial Craft: Pomanders
Happy New Year! I hope you had a wonderful holiday season and that you're settling into 2014. I spent Christmas with my family in Ohio, listening to my dad's beloved Ray Conniff Singers and cooking up a storm. We spent many an evening by the fire and even processed maple syrup in one long day of patient boiling and simmering.
I also had a rather crafty evening in front of a Doris Day movie, and that's what I want to share with you now. I made pomanders: fruit studded with cloves and rolled in spices.
Pomanders originated in the Middle Ages, when folks would melt spices and aromatics together and enclose the resulting mass in perforated cases. They then wore these around their necks or carried the cases with them to ward off plague or disguise body odor. In the 17th and 18th centuries, the English began to make pomanders the way we think of them today, poking oranges and apples with cloves and rolling them in a mixture of spices and preservatives. Early immigrants to North America brought this craft with them as a Christmas or New Year's custom, but as oranges were far too expensive (they had to be imported), colonists typically made their pomanders with apples.
In researching the history and construction of pomanders, I was pretty surprised by this last fact. Like many women my age, I grew up with the American Girl dolls, and Felicity (the colonial-era doll) had a book of colonial crafts for girls to make. One of the crafts was, of course, a pomander made with an orange, but it turns out that very few colonial girls could have used oranges for their crafts. American Girl lied to me! Or, perhaps, glossed over the more complicated truth; Felicity very well might have been able to afford an orange, as her father owned a general store and would have had immediate access to imported produce. But her friends? Probably not.
Despite this disillusioning discovery, I enjoyed making the pomanders. I chose to make a "real" pomander out of an apple, spiking it all over with cloves and rolling it in a mixture of cloves, cinnamon, ginger, nutmeg, and orris root (a preservative that helps it last). The other adhered to my childhood understanding: a simple pomander made with an orange, with only a decorative pattern of cloves. This one won't last very long.
They both make my apartment smell quite nice, however, and I'm looking forward to keeping the apple pomander for years to come. If you'd like to make your own, here's the recipe I used.
Pomander
(slightly adapted from InSeason)
1 apple or orange
several ounces of whole cloves (varies)
1 tbsp cinnamon
1 tbsp cloves
1 tbsp ginger
1 tbsp nutmeg
1 tbsp orris root
Mix the ground spices together in a small bowl. Set aside.
Press the whole cloves, sharp side down, into the fruit. You can make a pattern, or if you'd like the pomander to last as long as possible, keep the cloves close together and cover the fruit with them.
When you've finished with the whole cloves, roll the fruit in the spice mixture. Store in a cool, dry place, still in the spice mixture, until dry. Make sure to roll the fruit in the spice mixture each day.

Apple pie
Sometimes you get old recipes right the first time: you decipher the flowery language, you make the right substitutions, you determine the correct proportions. And sometimes, well, you don't.
This is a story of when I got it wrong.
We begin in apple season. I've been buying apples nonstop at the farmers' market every Saturday, and sometimes my friend asks me to pick up her farm share for the week and I wind up with a dozen more apples besides. A few weeks ago, I found myself with more apples than I knew what to do with. So I decided to make a pie. Easy, right?
I turn to my newest cookbook, The Art of Cookery Made Plain and Easy by Mrs. Hannah Glasse, originally published in 1747 and updated in 1805. Hot off the presses! Verbatim, here is what she tells me about how to make apple pie:
"Make a good puff paste crust, lay some round the sides of the dish, pare and quarter apples, and take out the cores, lay a row of apples [t]hick, throw in half the sugar you design for your pie, mince a little lemon peel fine, throw over, and squeeze a little lemon over them, then a few cloves, here and there one, then the rest of your apples, and the rest of your sugar. You must sweeten to your palate, and squeeze a little more lemon. Boil the peeling of the apples and the cores in some fair water, with a blade of mace, till it is very good; strain it, and boil the syrup with a little sugar, till there is but very little and good, pour it into your pie, put on your upper-crust and bake it. You may put in a little quince or marmalade, if you please."This raises several--okay, many--questions. First, I need to find that puff paste recipe. Second, how many apples? What kind? I suppose I can wing the seasonings, but really, how much sugar should I design for my pie? (And why on earth is this recipe so poetic?)
The recipe for puff paste is no help:
"Take a quarter of a peck of flour, rub in a pound of butter very fine, make it up in a light paste with cold water, just stiff enough to work it up; then roll it out about as thick as a crown-piece, put a layer of butter all over, sprinkle on a little flour, double it up and roll it out again; double it, and roll it out seven or eight times; then it is fit for all sorts of pies and tarts that require a puff-paste."Upon doing a bit of research, I discover that a quarter of a peck of flour is 2 dry quarts of flour, or 8 cups. This tells me several things: First, this will make WAY more puff paste than I possibly need for one pie. Second, this is probably because most women make a lot of pies and tarts at once (on baking day, for example), unlike our silly modern methods of making one pie at a time when we want it. Third, I need to know how thick a crown-piece is.
Happily, I have some help in the form of Fresh from the Past, a collection of modernized recipes from 18th-century London. The book contains recipes very similar to Mrs. Glasse's puff paste and apple pie, so I set to a makeshift sort of preparation, combining and substituting where I see fit. For example, I design 1/4 cup and 2/3 cup sugar for my pie (divided for that layered effect) as recommended by the modern book. The most troubling part is where I make a syrup of the apple peels, water, and sugar. Most likely this is meant to extract some of the pectin to help the pie gel, but my syrup winds up more watery than pectin-y. Nevertheless, I pour it over the apples, cover the whole thing with a top crust, and bake. Thanks to the mace and cloves, the pie smells heavenly.
And it tastes heavenly, too. The problem? The watery syrup turns the whole dish into pie soup. It never gels, perhaps too because I used a mixture of sweet and tart apples rather than sticking entirely to tart Granny Smiths.
Josh makes a lot of fun of the pie, and I vow to redeem myself later with a new pie. (It's semi-successful.) And I settle down to enjoy the tasty pie soup served over Greek yogurt, which I highly recommend should this happen to you.

Colonial Cookbook: The Art of Cookery Made Plain and Easy
Meet Mrs. Hannah Glasse. By day, she is a plain English housewife, struggling to scrape by in the mid-1700s. By night, however, she works on her revolutionary new idea: a cookbook designed for the masses of untrained servants working in fine English homes.
By 1746, when Glasse began to write The Art of Cookery Made Plain and Easy, a growing middle class was settling into the cities of England. Hoping to set themselves up comfortably, they hired servants, but very few of those servants actually knew how to cook. Glasse aimed to fill that void with her cookbook, offering a collection of original recipes and those rewritten from other sources. She was clear about her motives: "I do not pretend to teach professed Cooks, my design being to instruct the ignorant and unlearned...and that in so full and plain a manner, that the most ignorant Person, who can but read, will know how to do Cookery well," she stated in her introduction.
And instruct she did. According to food historian Karen Hess, Glasse's book sold well in England and her colonies in North America following its publication in 1747. Many noted Americans owned copies (including Thomas Jefferson and George Washington), despite their growing discontent with Mother England. In the mid-18th century, many Americans still relied on English foods, as they still saw themselves as British subjects. Yet ingredients found only in North America crept into their English recipes, as Glasse's special "American Mode of Cooking" section proves.
And we see "American" ingredients and recipes in this book because I'm using the 1805 edition. By this point, foods in America began to take on a more distinctly "American" flavor, just as the newly-minted nation began to form its unique identity. This edition comes at a major turning point in American history, and the recipes and ingredients reflect that, harking back to the colonists' European origins while looking ahead to New World foods.
I'll try to highlight that cross-section with the recipes I choose from Glasse's book, but of course you can expect some recipes just for fun, too. How could I have resisted those stewed pears?

Spiced, stewed pears
Thank you for all your wonderful comments on our news! It can be scary to put big announcements out into this void of the internet, so it meant a lot to read your good wishes.
We're knee-deep in fall over here in New England. Leaves turning color, crisp and clear afternoons, days growing shorter. Sometimes I think that New England is my favorite place to be come fall. Though the leaves turn brilliant orange and red in Ohio, the days are never as consistently clear and blue, thanks to our moody Lake Erie. Plus, as a history teacher, fall and colonial history seem to go hand-in-hand for me, and there's so much history to be mined here in Rhode Island. Walking by a low stone wall puts me in mind of a colonial homestead, the stones demarcating property lines from faraway neighbors. And teaching colonial history come fall, as I'm doing this year, just feels right. (Maybe it's the Thanksgiving/Pilgrim connection, which is basically ingrained by this point.)
At any rate, I'm going to pursue some colonial studies of my own on this little blog for a while. We've looked at 18th-century Williamsburg before, thanks to the Williamsburg Art of Cookery, but now we're going to get serious. We're hauling out the real, original recipes. Even if the results are less than savory.
Luckily, one of the first recipes I tried turned out beautifully.
Pears are delicious on their own, and oh-so-fall and wintry. Since I was little, some relatives have been sending us a big box of pears and grapefruit for Christmas every year, which my dad would store in the cold cellar of our house. When he felt like topping off a meal with fresh, crisp fruit, he'd trek down to the basement and return with a perfectly-chilled pear, and he'd slice it up for all of us to sample. It's still one of my favorite holiday (and post-holiday) traditions.
But Mrs. Hannah Glasse, writer of one of colonial America's most popular cookbook The Art of Cookery Made Plain and Easy, takes those pears and raises me one. You peel and quarter the pears, then bathe them in a delicious mixture of red wine, cloves, sugar, and lemon peel. Bake until the pears are soft and blushing, and they taste like November straight out of the oven. There's nothing better.
Spiced, Stewed Pears
(adapted from The Art of Cookery Made Plain and Easy)
3 pears, peeled and quartered
1/4 cup sugar
1/2 cup red wine
1 tbsp lemon peel
4-6 cloves (varies depending on how much spice you want)
Preheat the oven to 350 F.
In a small bowl, mix the sugar and wine together until sugar dissolves.
Place the pears in a ceramic or glass baking dish and pour the wine mixture over them. Scatter the lemon peel and cloves (more if you like intense spice, less for a milder flavor) over the mixture. Bake for 40 minutes, stirring the pears once halfway through.

How to render suet for cooking
Back when I first started this blog, I learned a few things right away about historical cooking. First, some old recipes are very similar to their modern counterparts (like pie). Second, animal fat is wonderful. From salt pork to lard, it's all delicious.
Lard may have fallen out of favor with the onset of fat-free food, but used sparingly, it can make all the difference in a recipe. It gives pastry dough that beautiful flaky texture, and it adds depth to dishes when used to grease pans before cooking or baking. Historical cooks knew this well, since they didn't have margarine or canola oil at hand (though butter was a delicious alternative). Today, it turns out there's a small but thriving population of cooks who use (and talk about) animal fat regularly, including those paleo enthusiasts who only eat what our hunter-gatherer ancestors would have eaten. (We're talking waaay back when.)
You can substitute butter for animal fat in most historical recipes, but if you'd like to see what all the fuss is about, you'll need to prepare the fat. Alas, this was a hard-learned lesson for me, one that explains why I had so much trouble making those delicious apple turnovers a few years ago. But you, ah! dear reader, you can benefit from my experience.
First, you need to find out what kind of animal fat you're dealing with. In the United States, you'll most likely wind up with one of two kinds:
- Suet, or raw beef or lamb fat
- Lard, or pig fat (can be rendered or not)
Rendering fat refers to processing "waste" animal products, like the fat around kidneys (suet), into an edible form. If you look at raw suet, you'll see why: it's stringy and piece-y, and hard to work with. You need to cook it and remove the sinews in order to use it. (Whereas I just worked in bits of raw suet to the turnovers...a difficult enterprise.) Here's what to do:
1. Chop the suet or lard into small dice, removing as many sinews and tissues as possible.
2. Place a heavy Dutch oven over medium-low heat. Pour in enough water to cover the bottom of the pot, and place the diced fat in the pot.
3. Heat, stirring occasionally, until the fat has completely dissolved into something that looks like oil and there are little browned bits floating around in it. Time varies wildly; it took me about an hour and a half to render 1/4 lb of lamb suet, but that's also because I had to start over.
4. Strain through a cheesecloth to remove all the browned bits.
5. Store in a jar or other container and let harden, then refrigerate indefinitely.
Then try it out in your favorite recipe and see what you think. It's different! Do any of you cook with animal fat? What do you like about it?

Boiled ham (or, a foray into Eastern Europe)
Sometimes I think way too hard about how to use up leftovers. The potential for waste bothers me. If we have half a head of red cabbage sitting in the crisper because Josh realized he really, really hates cabbage after a disastrous night of fish tacos, I have this deep-seated urge to use it up. And not just in any old random dish. It has to complement the rest of the meal I'm putting together. (See? Told you it's a lot of work. Which is entirely due to my
So the other day, when I was planning a meal around 18th-century boiled ham, I decided to use up said red cabbage and some fennel and goat cheese that was lying around. The flavors and textures seemed like appropriate complements to the meatiness of the ham. I sauteed the cabbage and some sliced onion in a little olive oil until soft, then covered it in leftover sour cream and baked it for about 20 minutes in a hot oven. Meanwhile, I sliced the fennel into thin strips and sauteed that in a mixture of olive oil and butter just until browned, following a recipe from Yotam Ottolenghi's wonderful Plenty. While the ham boiled away in a big pot of water (seriously, that is the only instruction), I caramelized the browned fennel and tossed the resulting fragrant mixture with the leftover goat cheese. Once the meat was finished, it was time to plate the food with a bit of cheddar cheese bread from our favorite bakery on the side. The result was one of the more colorful plates I've seen in the dinner department.
Josh was hesitant to try very much (the cabbage debacle still fresh on his palate), but I dug in. And after a minute the flavors and textures all seemed to meld together and call up an entirely unexpected food memory: that of robust, satisfying meals eaten one fleeting spring week in Budapest and Prague. Somehow, without really meaning to, I'd channeled all those leftovers and one 18th-century dish into a hearty eastern European dinner.
When I was in college, I spent the spring break of my senior year in Budapest and Prague with the guy I was dating at the time. He was studying abroad in Hungary, and it was the first time I'd ever been east of France. I remember the food vividly: soft cheeses soaked in olive oil and garlic, apple tarts, a somewhat successful homemade goulash, and giant mugs of dark beer. We visited a medieval-themed restaurant in Prague, where we ate fried pork cracklings and hearty bread. (There was other food at that meal, too, but only the pork cracklings stand out. Understandable, right?) The food was so different from the less flavorful western dishes I was used to that it still glows in my mind as a turning point in my dining history. But I hadn't revisited those flavors since that spring.
The night of the accidental eastern European meal, though, I rediscovered those tastes. Sweetly sour cabbage, salted with bits of bacon; butter-browned fennel, faintly tinged with anise and tangy goat cheese; salty, toothsome ham. Like discovering a new ethnic cuisine, it was a window into a different kind of food world, and all thanks to the happy accident of trying too hard to use up leftovers. I only wish Josh didn't hate red cabbage.
Boiled Ham
(slightly adapted from American Cookery by Amelia Simmons)
2 lbs of ham
mustard, for serving
Fill a large pot with water and set over high heat. When the water boils, carefully set the ham in the pot and let cook, uncovered, for about half an hour. When cooked, remove the ham from the pot and let cool slightly on a cutting board. Slice off the rind and reserve for another purpose. Slice the ham thinly and serve with mustard (and eastern European sides, if you wish).
